Last week my family finally got out for vegetable picking – one of the summer to do activities we had on our list for this year. One of the vegetables we picked was zucchini – a lot of fresh green zucchini. Honestly I didn’t have a recipe in mind when I picked them. I did it anyway because it was fun, the weather was perfect for an outing and the fresh vegetables in the farm were so tempting.

Later that day as I was looking at the photos from our recent trip to Canada, it struck me that I enjoyed a zucchini dish at a restaurant in Toronto. I prepared my own version of fried zucchini inspired by the restaurant dish ~ my family loved it. Below is the recipe, you can incorporate any spices you like.

Ingredients

  • 2 green zucchinis
  • 3/4 cup of besan flour
  • 1 cup of rice flour
  • 2 teaspoons of crushed red chillies/ red chilly flakes
  • water as needed
  • salt to taste
  • olive oil or canola oil to fry

Instructions

Cut zucchini lengthwise into thin slices. Mix besan flour, rice flour, red pepper flakes and salt in a bowl. Add water to the flour bowl and mix the ingredients to a pancake mix consistency. Dip thin slices of zucchini in the batter and fry them in hot oil. Fried zucchini will be crispy and the chilli flakes add flavor and heat so no dip is required.
